The blue light on the handles, what does it mean?

I believe the blue lights are just there to tell you the kettle is still on. I love the one I have It shuts off when the water is hot and you won't have a fire. I hope this answers your question. Best of Luck Mrs. B

If you take off the lid will it allow you to boil water for an extended period of time? (I need 3-5 minutes)

I don't believe it will boil past it's sensor. It will boil with the lid open and you can simply restart the process (which is quick as it's already boiling). FYI, the lid opens at a 90 angle and you cannot force it beyond that. (Also mine is the white version, I can't speak to other options)
