Would Wilton Tips work on these?

Yes if they were the same size tips. These bottles are very small and not great IMO but I do use metal tips with them just fine.

Do you have to squeeze it out ? Or does the icing come through easily?

it depends on the icing consistency. for sugar cookies royal icing they worked fine, always keep them head down in a cup with a wet cloth inside, so it doesn't dry out the icing.

Can I use my own piping nozzles with the bottles?

Not usually .they are a different size

How fine is the smallest nozzle? - I'd like to draw faces on small gingerbreadmen

I'd say it's about a no. 3 tip size? It should be great for faces on normal sized gingerbread men. I tend to use my own metal piping tips on these bottles though, just for better accuracy really.
