Q: can I use wood dust from sycamore, birch and beech trees I have been sawing?

Hi...checked this out and birch and beech are fine as long as its not treated...sycamore is not suitable.

Q: We have just put this together but there is no drip tray - should this be included ?

You should have one However you can use a sheet of tin foil as a drip tray. you can also wrap your wood chips in tin foil and poke a few holes in it before use. BTW I use tin foil as it is less messy.

Q: How long does it take to cook a smallish (10-16 ozs) fish/trout

Typically takes around 20 to 30 minutes to cook and smoke fish fillets in the smoker oven with both burners going. If a whole fish, gutted of course, it takes around 40 minutes.

Q: can I use this on a gas hob?

The instructions say not to. Even when closed it gives off smoke... It would leave your house smelling very smokey !
