Louise Avery began brewing kombucha in 2010 as part of a self-sufficient and healthy lifestyle, living on a Scottish Island in the Hebrides, simply because she loved its unique and moreish taste. Now she is one of Londonโs best-connected kombucha producers and the owner of Lois and the Living Teas. Here she reveals her tried-and-tested recipes that use the freshest produce to create truly delicious cold teas. Starting with an introduction to kombucha, Louise offers information on the types of tea you can use to flavour your kombucha, the health benefits of drinking it, the essential equipment you will need to brew your own and the dos and don'ts when it comes to selecting other ingredients. Following this, she presents a step-by-step basic process for brewing kombucha, bottling and storing and controlling the yeast. Recipes are then organized by type of base: Fruit, with recipes for Blood Orangeade, Pear and Ginger, Pomegranate and Lime, a Cranberry Cleanse and Blueberry Lemonade; Vegetable, including Sour Rhubarb Fizz, Striped Candy Beetroot and Lime, and a Virgin Mary. Next up, Flower has ideas for Hibiscus Kombucha, Rose Petal Tea, Lavender Love and a Hoppy Pale Ale, while Herb, Spice and Tea is where things heat up with Lemongrass Tea and two Turmeric Immune Boosters as well as Jasmine Kombucha and a Lychee Basil 'Mojito'. You'll be spoilt for choice for ways to flavour this health-giving drink. Review: Beautiful book with fab content... - What an absolutely BEAUTIFUL book! I've read it cover to cover and can't wait to try some of the recipes. It's truly brilliant. I'm not just saying this but out of all the fermenting books I've got (a lot), this one makes me want to have a go at re-creating the recipes more than any other... simple to follow methods that makes booch making totally achievable for anyone. Review: Lovely Informative Book - This book is great. Really good quality pages and I'm so looking forward to trying out the flavours. I don't have a cold press but will consider getting one so I can experiment with flavouring my Kombucha brews.

Highly Recommend for All Foodies
I had the pleasure of tasting kombucha from Lois and the Living Teas when I was visiting London recently, and was delighted to find her book on the practice of home brewing. While I've enjoyed the taste and benefits of kombucha for some time (coming from New England I am spoiled!) I have not been so brave to bring this venture into my home kitchen- until now! This book, aside from being aesthetically gorgeous, is readable, accessible, and has been just what I need to get started. Louise describes the process of brewing kombucha clearly, provides tips for supplies and ingredients (even in the US!) and recommends a wide variety of recipes, including her delicious Rose Petal Tea, which offers a pure and delicate alternative to the earthy, dark kombucha I'm used to in the States. I appreciate the author's dedication to local foods and her passion for bringing kombucha to every household. (Surprised by previous reviewer's comment to seek online information, as I find this book to be more comprehensive and, as advertised, appropriate for beginners. Plus, you cannot beat having a beautiful hardcover in hand!) I recommend this book to any beginner brewer, kombucha enthusiast, or cookbook collector.

Unfortunate waste of money
Unfortunate waste of money. The book is limited on information, ie its rehashed and not original. Out of 95 pages of book 58 have text. If you join a group online or do a basic search you will have a more complete compendium than this. Ive been brewing kombcuha for over a decade and anytime a book comes out I get excited but this is a let down. I plan on getting a refund.
