Can this be installed on a fiberglass/kevlar kayak?

Yes it can, recommended fasteners would be nut/bolt with washers on underside definitely use stainless steel for clean long-lasting attachment and always remember to use a little bit of marine sealant between the component and the hull, enjoy"

Does the YakAttack GridLoc MightyMount XL use or have an optional backing plate?

There is no backing plate available for the YakAttack MightyMount XL or GridLoc MightyMount XL. One of the main reasons a backing plate is used is to help increase the rigidity of the install. If you are needing a heavy duty install then it exceeds the design intent of the GridLoc MightyMount XL and moving to the anodized aluminum GT175 or GTTL175 GearTrac is the best option.
