Description says "15 pouches (pack of 3)" -- does this mean 15 total tea bags, or 45?

There are three boxes of 15 tea bags or 45 tea bags.

So even though the product photo shows the old packaging and says "artisan" pouches, what they send you is their new Earl Grey in pyramid pouches, right?

Yes, the last order I had of Earl Grey (like 3 months ago) came in the pyramid pouch. Enjoy!

what are the pouches made of? polyester?

On their website it states - The tea pouches are made of Polylactic acid which is derived entirely from renewable resources, such as corn. They are compostable also.
