Some reviews say these are nickel plated instead of pure nickel - which is it?

Pure Nickel! The pure nickel plates here are made of a large number of thin pure nickel layers pressed together(annealed process). The pure nickel sheets may peel apart in layers during your DIY process, but this doesn't mean the sheets are nickel plated. Nickel is ferromagnetic at or near room temperature.
