Is this really organic?

It is not certified organic by any authority, but the mainstay Zaatar herb ingredient is grown organically. For some twenty years, our plantation source in Lebanon has been the leader in sustainably cultivation of Zaatar because the Zaatar plant is now rare to find in the wild and is a protected species in at least two countries in the region.

Is this processed or packaged in a facility that also handles wheat or other gluten-containing cereal?

To follow up on this question, we started describing the mainstay ingredient on our product back label as "zaatar herb (hyssop)" Sorry for the confusion, but hyssop is the name in the Jewish tradition for the same zaatar herb (which is an Arabic name). The reason we're using the Jewish name hyssop, is to distinguish zaatar herb from zaatar the mixture, because zaatar is a reference to both a distinct herb and the mixture (traditionally with sumac and sesame seeds). 
The zaatar herb or hyssop is a distinct specie in the mint family along with thyme, oregano, marjoram, savory BUT it is distinct and native to the Middle-East or Levant region.  It is also called Syrian oregano or Lebanese wild thyme, or just wild thyme.  it is a herb that historically was found in the wild, but now it is either a protected species or extinct in the wild.  Therefore, people do cultivate it but it is not easy to cultivate well and difficult or expensive to find good cultivators and supply. That is why most zaatar mixes contain substitutes for this zaatar/hyssop herb that often include a combination of common Thyme, Oregano, Marjoram, and Savory herbs, with varying degrees of flavor qualities.
Our Tyme Foods zaatar mixture contains this distinct zaatar/hyssop herb and our partner plantation has been perfecting its cultivation for over 20 years in Lebanon.

How do you sanitize it? ETO, irraidiating, steaming?

The zaatar herb is washed and dried before processing at the farm in Lebanon.  For quality assurance, we test the zaatar both before it is exported, and here at a US lab, for various microbiology analyte's.  It is mixed and packed at a Virginia state licensed facility that practices proper and approved sanitation standards.

Is this irradiated when importing?

No, not at all. 
We grow and mix this zaatar from the start in Lebanon to packaging and labeling here in the states and we do not irradiate.
