what is the max height? will it accommodate 6'4?

The maximum height is 50 inch, fit for 4'9" to 6'3" exercisers.

Has anyone replaced the seat and if so which replacement seat would fit this ? My sciatic nerve went out after first use .

How is this compared to a CrossFit assault bike?

Assault bikes are full body machines. Bike only lower.

Can the handle bars be removed to let the bike be placed under a standing desk?

The handle bars can be removed.However, because of the height of the bike without the handlebars, and the seat and handlebar assembly at their lowest setting, and the base of the bike, unless you have a very high desk my answer would be “no” it will not work or fit. 😢 > 😎
