Do you need to use a coupler with these bags?

A coupler is only required if you want to be able to change the decorating tip, otherwise you can insert the metal tip right into the bag from the inside before you put the icing into the bag.

has anyone used this bags for dulce de leche? I think thick so it doesnt burst when squeezing

these bags are nice and thick. I have put very thick products inside and have put lots of pressure and they have never bursted or been close to bursting. I would definitely recommend.

It depends on how much heat you want to apply. They aren't rated to be put into an oven as they would melt, but they should be ok if just a small amount of heat is around.
