A great cider yeast
I've used this cider yeast now to make several batches of hard apple cider and also peach and it does a really fantastic job. I first started using wine yeasts as I also make wines and meads, but was not really too satisfied with the results in that much of the fruit flavor seemed to be stripped at these lower abv brews. I decided to give this yeast a try and I'm really happy with the results. I get a nice, dry cider that retains a lot of the natural fruit flavor with no bitterness or "young" taste, with a really good aroma.The yeast drops really well and forms a nice solid cake if you leave it to clear for awhile, so racking is very easy. I know this brand has some variations and I'm anxious to try a couple more because this one really impressed me with repeated, excellent results.

This was recommended to me as a good cider yeast.It is.I've done a few other strains of cider and wine yeasts, and this is just as good as any of them. I'll keep it in my rotation as I refine my process and my palate.

Ferments apple juice very well
worked fine to make alcohol. I had lots of apples and made cider, which I turned into apple cider vinegar. I used Corn Sugar, because I was turning it into vinegar later anyhow. I would typically use brown sugar for good cider. This fermented the apple juice great to about 15% alcohol. I can't attest to the taste, like I said, I used corn sugar, and it was very sweet alcohol. Once I oxidized it into the vinegar, it's an excellent "apple" tasting vinegar.

makes delicious hard cider
We have tried a few white wine yeasts for our hard cider, but the ones we tried strayed too far from the natural yeast flavor. This cider yeast makes for quick and delicious hard cider that does not hinder the natural apple flavor. We've made a couple of batches and have been very happy with it's performance thus far. We will be purchasing this again!

A little slow
I usually use red star champagne (yeller pouches). Gave this a try to see if there was a difference with the esters etc. One thing people should know is that a yeast alcohol tolerance does equate to the alcohol content of your brew. The alcohol depends on how much sugar is present. So a yeast could be 18% and you might only put 8% worth of sugar. An original gravity tool is something to invest in.I noticed it is a little slow to get started and did take longer to finish. I ended up with some activity in secondary fermentation. Overall it ended up clear and palatable. I did wind up with some yeast in my bottles as I opted not to transfer to an additional secondary to clear it out after the fermentation finally stopped.

Clean, quick ferment
Made a cider this past fall with this yeast. I've used several other kinds of yeast (WLP 775, SafCider, Mangrove Jacks M02 to name some) in the past and this is as good as any of them. Seemed to ferment cleanly and quickly...and completely! My FG was 0.998 (from 1.056, 7.35% ABV). The picture shows the cider being a tad hazy, but I think that's more from the spices I added at kegging...the original cider was crystal clear.

Faultless
Excellent product. I used it to turn organic apple juice into scrumpy (traditional still hard cider from the West of England).Got the juice to room temperature, put it in, sealed it with the air trap. Couple of days later, it was bubbling away. Ended up with a 5% hard cider that's currently mellowing.

Hard Cider Tastes Great.
Used this yeast for my first attempt at hard cider. VERY happy with the result. The yeast was a slow starter but finished up in about a week and yielded about 10.5% ABV.

My go to cider yeast year after year
Kept in the fridge for a few weeks and then made a lovely batch of cider without issue.Been using this yeast for the past couple years, seems to keep well and always starts fermentation without issue.Not compared the taste to other yeasts, but had lots of compliments about the cider Iโve made using this!
