does it work for white/light hair?

No. It needs pigment to the hair to work. If you have light hair, then it would not be beneficial for you.

Do I need protective sunglasses while using this and which ones do you recommend?

No, safety glasses are not required. If I feel the light starts to bother my eyes, I'll close my eyes or will turn away with every few flashes. I've watched lots of reviews and videos on this product and no one has ever worn them or indicated they are needed (at least the ones I have seen).
