They have different kinds, so this pertains only to the "original". Ingredients listed on the bottle are:Jalapeño puree(green jalapeño peppers, salt, acetic acid), water, chili pepper, dehydrated garlic, spice (it does not say what kind of spice, odd), dehydrated onions, olive oil, xanthan gum.

How many calories? It says 0, but how is that possible?

What is the shelf life of an unopened bottle?

I'm not 100% sure but I have had some bottles stored for over 3 months and they were completely fresh after that period of time.
