Do the screws hold securely in hollow bifold door?

I thought they would work for that. The door will not open properly though. The latch causes it to bind up about 2/3 of the way.

what can i use if the cupboard is not flat? There are router-ridges that stick out for 'design', all around the edges approx 2" all around the edge

This type latch may not be the correct one for your doors. You could be "creative" and try to shim, etc
