More than a fillet knife
If you're looking for a stiffer than average fillet knife, this is perfect, buy it, you wont regret it. I have found that it's also completely awesome as a relatively large paring knife in the kitchen, and once I used it there, I realized that's where it needed stored. It's now one of my most used kitchen knives. For light tasks such as fine chopping and mincing, thinly slicing, piercing, deboning, etc., this knife is superb. The knife looks beautiful on the magnetic block but more importantly, it's extremely well balanced, stays very sharp reasonably long, cuts through about anything effortlessly, releases foods well due to the Damascus texturing, and is very easy to keep razor sharp with a steel and ceramic rod due to it's fine grind and thin blade geometry. It's a nice fillet knife, but if that's all you use it for, take it to the kitchen, you're gonna love it even more.

Great Sharp knife that holds an edge.
This is the second Dalstrong knife that I have gotten. Itโs really sharp, holds an edge for a long time, and looks really good. If you want a quality knife that isnโt going break the bank like some then this is the knife brand to get.

Will probably purchase more knives from Dalstrong
Came with a good edge, but can be improved with a whetstone, which I did. Attractive finish, good balance, and does an excellent job with poultry, which is what I tend to use this for. Whole turkeys, chicken, duck...a very good choice. For something like fish fillets, I'd choose something a little thinner with better flexibility in the blade. All in all, a great knife. Very happy with the quality for the price.

this knife is sharp, with a degree in culinary arts, and a bachelors in hotel management, 20 years cooking in a kitchen, this isn't a statement I make easily. this is the second Dalestrong shogun series knife I've bought, although I'm worried about the bolster being insufficient for industrial use, its very nice for home use. the steel is some of the hardest I've seen, I sharpen knives for people all the time and this one takes special stones to keep the 8-12% edge sharp. it also takes time to get dull, overall its one of the best knives I own, and I have about 30+ kitchen knives and use this one all the time. Its much more than a fillet knife, its a great utility knife.

Best Bang for Your Buck!
I have about 10 knives in my standard every day use rotation. For the money I think the Dalstrong is probably my top pick although I also LOVE just about anything by Yaxell (I highly recommend their ENSO HD series, they are a top performer, well priced and you'll probably be the only one you know that has them). Tojiro DP line is also a top bang for your buck pick and is a little sharper out of the box, but Dalstrong is MUCH better built and better looking. These Dalstrong Shogun knives handle an unbelievable amount of abuse and hold up. Dalstrong are very good looking knives. They seems to be a little heavier than my other knives, but being a larger fella I love the extra heft and I feel like I have better control. Dalstrong's handles are my favorite of all my knives. I end up using this knife more than others just because I love the feel of the handle. Edge retention is also very impressive on these. Forget about price, marketing, name, etc... which ever knife looks and feels the best TO YOU will probably be your favorite and most used knife. Dalstrong hits it out of the park in looks and feel FOR ME. You'll have to decide for yourself what you like. I rarely give a 5 star and what pushed Dalstrong into the 5 star is their customer service. TOP NOTCH! I seriously can't say enough good things about their customer service.

Good knife
I bought this knife to fillet fish that I catch. Itโs very sharp right out of the box but after using it a couple times I could feel it starting to loose its edge. I got this knife because I wanted to try filleting with a stiff blade. All my other fillet knives are flexible which Iโm more use to. Iโm not a professional at filleting but this is a good knife. I probably just need to get more use to it. I wish it was at least a inch longer. I find it a little harder to fillet bigger fish. Itโs a beautiful knife to my collection.

My Shogun Series Filet Knife, does its job. It has a, precision point !! .. NOTE: I was a professional (Meat Cutter/Butcher) for over 13 years and a in-home chef (yes I am a woman..LOL). I have been looking for another set of knives for a longtime. The proper weight, balance (blade to handle ratio), quality of the steel, edging of the blade (angle of the edge), grip of the handle and the flexibility or stiffness of the blade, depending on the task you are doing. All my Dalstrong knives are stellar. !.. These knives are NOT meant for the dishwasher or children. The blades are very sharp! (I just glazed the edge with my finger and cut the crap out of myself !!). They're a professional set . These should be hand washed.... If you want knives that you put in the dishwasher buy something else!! These are a professional set and should be treated as such.. Hope this helps..!!

ultra sharp
So, I finally got to use this awesome Filet knife today and it is another winner from Dalstrong . I am becoming slightly obsessed with their products and that is due to the sheer quality . It just doesn`t get any better than this . In my pre-Dalstrong life, I always bought mediocre products, I didn`t want to spend too much money, but I didn`t want the cheapest product either, but , if you use knives a lot, it really is worth it to bite that bullet and invest in some good quality items. This one is the Shogun series, really neat, ultra sharp, and the sheath has a little safety pin, to where it won`t fall off. All of their products come packaged extremely well and it feels like christmas unwrapping and opening the boxes. I am a Dalstrong fan for life now and I hope to be able to acquire a few more of their products. I never want to go back to dull blades and rip through meat or tear ripe tomatoes apart and squish them, I promise, it won`t happen if you use Dalstrong products!

Good quality, good handle, well balanced, cuts well but I wish that the blade would be a bit more flexible to filet .

Such a nice knife beautifully crafted and incredibly sharp. One nice enough to keep and pass on. A lovely damscus finish. I like it enough to buy the next one in the set the shogun series chef knife.
