Question 1

How much do these weight? I am backpacking and will be fording rivers and need something very lightweight.

They weigh less and a pound.   They didn't move the scale at all when I weighed them.  I teach water fitness, but I also use an arch support, so you may want to add lightweight supports since you'll be fording rivers with stones, etc.  
The traction is also good, as I keep a spare pair next to a stationary bike and the soles don't slip around on the pedals.

Question 2

Does sand and small holes collect in the shoe as you walk the beach?

I have not used them on the beach yet so can’t say for sure.  But these are pretty solid.  I only used them in the pool so far.  There are not holes that you can see in them but they do let the water in I feel like they won’t let sand in but as I said, I haven’t tried them yet.  
As I said they seem solid and have a nice sole.  They are comfy and I’ll like how the top secures.

Question 3

I'm a size 9 regular...Amazon is telling me to buy 7.5-8.5...do they run small?

The water shoes are roomy so if they are telling you to get size 7/5 I would get the 8/5 well I hope this helps

My feet swell do these shoes stretch?

The shoe itself is somewhat forgiving.
The velcro tongue wraps around the top of the foot and is very adjustable.
