How long are the probes?

The probe leads are just over 40” k type thermistors. For the money this is a good tool to have. For any Critical temperature measurements I use the copper brand

Does this thermometer have a user calibration option? Does it have cold junction compensation?

Not that I know of. A digital thermometer, that, depending on the probe, can measure extreme heat and cold.

Would this make a good field thermometer - subject to wet conditions?

Not sure about the unit itself the probes can be put in water.
