No to bluetooth and even lossless 2.4G wireless technology cannot support sampling rates above 48 kHz. You have to be wired to get high enough bandwidth to be truly certified Hi-res.

The cables have no differences in terms of manufacturing quality. The technical difference is that the 2.5mm one comes with four poles (instead of 3 on the 3.5mm cable), where the left channel and the right channel do not have to share the same ground wire. This is called balanced output and you have to have a end device that supports this. The advantage is that THEORETICALLY you would have less interference between the signals of the two channels as they are physically better separated, and hence also a wider sound stage. However, chances are that you, as an average human being, won't be able to tell any difference when you are actually listening to it. To the vast majority of people, a well manufactured 3.5mm output circuit is just as good as the balanced one, let alone the cable.
