Does the champagne color discolor over time?

No it doesn’t change the color but they chip very easily so make sure you only use rubber or silicone utensils.

Does the coating easily scratch off?

These are really great pots and cook food very quickly and efficiently.. definitely worth the price. I did make the mistake of using a stainless spoon however and yes it did chip the coating but totally my fault. Just make sure you use silicone or rubber utensils when cooking !
