How thick is the silicon mat?

Not very thick, actually quite thin. I looked at the box and it doesn’t say. It does work well. I’m very pleased with it.

Can you cut them to fit?

I cannot be cut. Silicone baking mats have fiberglass in their interior. You will be risking getting it in your food.
