Why does it have a hdmi 1.4 port when hdmi 2.1 is out? using old technology and charging a high price.

You've mis-read the specifications. It actually has DisplayPort 1.4 (highest currently available) and HDMI 2.0 (Highest currently avilable in computer monitors). HMDI 2.1 is extremely new and is only used in a handful of High-End TVs.

Will my gtx 780 be able to run this or should I upgrade?

It will work, but you will definitely need to turn some settings down. Don't expect to max settings and get 144 fps+ with a 780. You wouldn't even be able to with a single 980ti. No being disparaging, just honest.

Does this display support a vesa mount?

According to the documentation this monitor has 100 x 100 mm VESA mounting functionality.
