Use massager to shake it-works great!
Excellent for sifting home ground flour. Secret: I use my Theragun massager to shake these. I just hold the end of the massager against the side of the sifter and it makes quick work of sifting. My method is to grind my wheat then sift it all through the larger (coarser) sieve, then sift that through the smaller (finer) sieve. Here are my results: Soft White Wheat-start with 4 cps wheat berries and I get 4 cups of finely (small sieve) sifted flour, 1 cup coarser flour and 3 cups of germ and bran. Hard Red Winter Wheat-start with 4 cups of wheats berries and I get 2 cups of finely sifted flour, one cup of coarser flour and 2 3/4 cups of germ and bran. I use it all in different ways.

A great tool for sifting freshly milled wheat
These sieves are perfect for bakers who also like to mill their flour and remove some of the bran. I typically use the 40 mesh size for normal bread baking. They are a good size, sturdy and I imagine will last a very long time.

Perfect for home milled flour!
I bought these because I bake using home milled flour and I needed a way to remove some of the bran and husks in order to reduce the bitter aftertaste of the flour. After a great deal of online searching I took a chance on these sifters because nobody could say for certain what the best mesh size is for what I am doing. I can now say with some confidence that the coarser mesh is perfect for making bread or all purpose flour and the finer mesh will give you a consistency akin to powdered sugar. Based on what I have seen milling red fife hard winter wheat the coarser mesh will give you something like 85-90% extraction and the finer mesh will be more like 50-60%. I can say with absolute certainly that these sifters have massively improved the taste and texture of my baked breads. Cleaning these sifters is easier than cleaning my old hand squeeze type sifter but no sifter is easy to clean. I usually just tap them out really well and store them without washing them since i use them so often. The quality of these sifters is good. The mesh seems to be very high quality and the stainless outer walls are made well enough to not create any concern about longevity. That said I wouldn't store them somewhere where they could be squished by something heavy. They are fairly light weight items after all. If you are looking for a good set of sifters for home milling applications I would definitely recommend these!

Works Exactly as Intended
I bought this to sift out the bran from my freshly milled flour for bread dough and it worked exactly as intended. The difference in fineness between the 2 is perfect for different uses. My process is to grind my wheat berries, then sift with the larger (coarser) sieve into a bowl. If I want to remove more bran I’ll use the smaller one, but I don’t find that necessary for more rustic breads. I like to then either separately soak the bran to add back into my dough, or I’ll use it to coat the dough for shaping. Why sift out the bran? I was struggling with my FMF bread not holding its shape. The bran is often the culprit because it can slice through the gluten strands, weakening the structure. Hence why you would want to sift it out and add it back after soaking or as an outer coating.

Excellent small
So grateful for these sifters! This makes removal of the bran from the wheat so easy and done in a few shakes! Highly recommend if you mill your own flour!

Sizes are reversed
These are as expected in terms of quality, but the pair I received is definitely reversed - the 6" is 40 mesh and the 8" is 60 mesh. Not thrilled about this but I guess I'll make it work
