how long is the blade and the knife total length?

The knife length is 8", the knifes blade only is 3 1/2" long. I have the original Miricle blade and the knife length is 8 3/4" and the knifes blade length is almost 4". I would like it if they made the blade longer like the first ones that I have but I like them. When I put the knives together, the knife handle on the new one is shorter then the original one I have. They cut just as good as the as the original ones. Hope this helps.

Can the labels on the handles be removed?

Yes, mine are gone... I don't remember removing them, so they must have come off in the dishwasher. BTW, these are AWESOME knives! I thought the old style miracle blades were great, and these are even better. I've got 3 sets of the old ones and a set of these new ones in 3 different houses I live at.
