The package does not say organic or non-gmo on it... is it really organic?

Our teff is all imported and grown naturally in Ethiopia- free of pesticides or any additives. We work with local farms who grown the teff grain and then we process it all at our facility in Modjo Ethiopia- all without any preservatives.

What is the general shelf-life of this teff flour? And what is the expiration date on current shipments?

yes! if you use only this teff- the color will be a rich brown

What is the carbohdrate count for 1 cup?

70 grams of Carbs in 1 cup. Teff is low carb, gluten-free and vegan. It has more protein than Quinoa so is good for muscle building and weight loss. It is also easy to digest and an anti-inflammatory. The Brundo Spice Company has the best Teff Flour. It is from Ethiopia too - which is a better Teff.
