The best brand of pasta as the wheat used is Durum wheat grown in Italy and it contains 20 percent protein unlike the wheat grown in the USA.

What a dry pasta should be
This is the best dry pasta I have ever used. The angel hair is finer than any other brands and takes 5 minutes to cook. It is a little more expensive than the well-known brands but worthit.
