I have been eating this way for the past 3-1/2 years, losing over 150 pounds in the process and coming off of all of my prescription medications (which is remarkable for me at the ripe old age of 70 now). What I like about this book is she shows others how they too can easily obtain such results. And she does it in a way that is humble and not pushy. For so many authors of diet and cooking books, it's all about their way or no way. But Kim is not like that. She starts out showing what kinds of foods to have in the pantry and refrigerator of a beginning plant-based food eater. Her list is very comprehensive, although I will say that as a person finds a few good recipes, they may pare down the amount of food items in their pantries. Then she moves into some different foods that many people may not be familiar with. A favorite of mine that she mentions is jackfruit. I've had jackfruit as a substitute for pork in pulled pork and pork barbecue sandwiches and I swear you can't tell the difference. In fact, I've known pork eaters to be secretly given jackfruit without realizing that they weren't eating pork. She also talks about miso (I love miso soup and eat it almost daily myself), nutritional yeast (a great healthy substitute for cheese), tamari, seitan, tempeh (another favorite meat substitute of mine) and tofu. Kim also shows us the things we should have in our kitchen to make some great plant-based meals. This section is invaluable because it is so easy to overbuy on kitchen gadgets and toys. The problem, at least for me, is not only does that become expensive, but where do you store everything? There are only a few essential items that you need and Kim describes what those are. Everything else is just a toy, which may be okay if you have the money and a really big kitchen. She also talks about substitutions. What to substitute in place of an egg in a recipe for example. Or what to use in place of oil. How to substitute for gluten (for those who are gluten intolerant). I could go on and on about what she covers. I particularly like the section on meal planning and organization. But you get the idea. There are sections on storing fruits and vegetables, moneysaving tips while shopping, how to decode food labels and even an essay about nuts by her father-in-law, Dr. T Colin Campbell (who says yes, eat nuts). And then the recipes: Breakfast recipes, breads, burgers, sandwiches, wraps, dressings and sauces, salads, appetizers, dips, spreads, soups and stews, entrees, side dishes and desserts. It's a very comprehensive book. Even after 3-1/2 years of eating this way, I learned some things from reading this book. And I got some great new recipes to boot. Even my husband, who's not a fan of pies in general, loves it. Although I've been vegan for over four years and have a small library of cookbooks, this is one I keep reaching for. If you're new to plant-based eating, I'd also highly recommend it; it makes the transition to a plant-based diet easy and delicious.

A WORTHY and GORGEOUS addition to your WFPB recipe library
This is a gorgeous book. The photographs are beautiful and the variety of plant based meals, sides, salad dressings, entrees, desserts is impressive. Such quality behind the Plant Pure brand. Their frozen meals which can be delivered via FedEx can be ordered on their website and these are REALLY tasty as well! Very reasonably priced too. Its impressive to find a WFPB cookbook with low fat, whole food, plant based and NO OIL!!!! I am so thankful for this book. While I know there were some problems with the initial printing of some copies of this book - NOT WITH THE CONTENTS and RECIPES in the book, but the publishers construction of the book (pages duplicated and missing).... the replacement I got is correct and gorgeous. Im really sorry that happened to Kim after so much hard work putting a beautiful product like this together. But I appreciate the publisher correcting that. The books are now corrected. Thanks Kim for such a great addition to my WFPB library. Plant Pure and Engine 2 are the ONLY WFPB cookbooks I will purchase these days. "NO OIL!!!!!". Cathy Fisher has a really great WFPB NO OIL cookbook out there as well. Im very pleased with ALL of Kim's creations!!!

So many new recipes to try that are with everyday easy to find ingredients
I was so excited to get this book and was hoping my copy wouldn't be one with missing as well as duplicate pages...but unfortunately is was one of those copies! Thankfully a replacement is fastly on its way! I've got 2 sections missing in mine- breads and dressings so I can't comment on those but the rest of the book looks just as fabulous as the first plant pure nation cookbook!!! So many new recipes to try that are with everyday easy to find ingredients! And as always , the meals are easy to prepare with step by step instructions and extra tips! I would give it 5 stars if it hadn't been for the missing pages.

You will not regret if you buy this cookbook for the Creamy Ranch Dressing alone!
I love all of Kim Campbell's cookbooks, but this one is exceptional. I make quite a few veggie burgers and really appreciate her 'Veggie Burger Formula' recipe that lists the typical ingredients used in veggie burgers and assists with putting one together with whatever you happen to have on hand, no need to make a last minute trip to the grocery store. Kim's 'Creamy Ranch Dressing' is worth the cost of the cookbook alone. I totally agree with her statement, 'you will never miss dairy-based ranch after you try this recipe.' Other delicious recipes include; Carrot Dogs, Orange Tahini Dressing, Creamy White Bean Soup, Sweet Mayan Lasagna, and Hot Fudge Sundae Cake. The recipes use common ingredients, are easy to follow and have beautiful enticing photographs. This is a cookbook filled with delicious recipes that can be enjoyed by both vegan and non-vegans alike!

ONE OF THE BEST VEGAN COOKBOOK OUT THERE
This and Plant Pure Nation are the best vegan cookbooks out there. Wonderful recipes. The Buffalo Hummus is outstanding and is now my go-to recipe for hummus. I loved the Potato-Crusted Mushroom Quiche. Other recipes that I thought were outstanding include: Portobello Mushroom Sandwiches; Blue Cheese Dressing; Creamy Ranch Dressing; Orange Tahini Dressing; Artichoke and White Bean Salad; Warm German Potato Salad; Spicy Nacho Sauce; Slow Cooker Apple Butter; Green Curry Coconut Soup (yum); Bourbon Mushrooms; Creole Red Beans and Rice; Peanutty Greens and Tofu; Southwestern Chili Mac; and Baked Salt and Vinegar Fries (very vinegary tasting but good and very crunchy). The Layered Taco Salad Dip was a big hit with everyone including folks eating the Standard American Diet. Wonderful. I have not yet tried the Shepherd's Pie recipe but will be doing that soon. Until now, I had not found a vegan cookbook where almost every recipe is a winner. Plant Pure Nation is also a winner by Kim Campbell.

Delicious Recipes, Great Photos
A beautifully crafted collection of recipes with excellent photos. Iโve been WFPB for awhile, recently decided to go the low-to-no oil route. This book is great for those interested in very tasty and healthy recipes without added oil. It has a lot of โbeginnerโ info on how to stock your pantry, menu planning, what various foods common to WFPB and vegan lifestyles but not to SAD diets are, etc. I didnโt need all of that. But the book is worth it for the recipes, alone! Asian Coleslaw, Malai Kofta...these arenโt your average โjust beans and rice and tofuโ recipes. That said, they also arenโt terribly complex or difficult. Like this book a little!

This book is wonderful
I have been plant based for over ten years. The Plant Pure Nation cookbooks are the best Iโve found. Kim Campbell has found ways to make plant based whole food that pleases most palettes, and satisfies the need for conventional comfort food. Stuffed peppers anyone? Whole food Fudge like brownies? She has you covered. Many low or no fat dressings that are nutritious and delicious. Recipes are easy with guidelines as to how long the prep and cooking should take. I recommend adding both books to your collection.

Inspiring Cookbook
This is a great book with easy to follow recipes for the beginner of a whole food plant based diet. The photos are an encouragement as when some dish looks appetizing, one is more likely to try it out.The "Getting Started" section is full of information and helpful hints for what to have in your pantry as well as how to organize a weekly menu. Very well done!

Lots of easy recipes
I am transitioning to a vegan diet but it is not easy. This cookbook changed that for me. There are easy recipes to make with ingredients I understand. So many Vegan cookbooks have ingredients you need a dictionary to look them up. I am very pleased.

Tasty recipes
All the Plant Pure Nation cookbooks are amazing. The recipes are easy and adaptable, healthy and delicious. Would recommend to anyone looking to eat more plant based meals
