Are replacment lens available for these lights? my amber one is along the roadside somewhere in nc or va.

I don’t know. My amber lens warped due to excessive heat. I replaced mine (easy to do) with a LED unit. Love it. No heat problem, good light,& less juice.

Has the white plastic body started turning yellow on anyone's yet? And how long has it been exposed to the sun?

I would plan on using this light on the over the waste water connections, is it water proof enough to withstand rain when towing or parked?

It's supposed to be and it appears to be but I haven't put it to the test yet. It points downward so rain would be shed and any water while driving would probably not penetrate it but it you set out to get water in it with a garden hose or pressure washer, you might succeed.
