EVERYTHING is here. The first several pages explain the Mediterranean Diet Pyramid and basic principles to get started. There are examples of meal planning, information about necessary core pantry ingredients, and why certain ingredients are essential for the diet. I want to add that I don't like spiciness; several medications I take result in a very dry mouth and spicy foods make my tongue feel like it's been burned. I've learned some spices can be omitted and there are others such as sumac and za'tar that improve the flavor profile without making a dish spicy. I've also learned how to prepare different rices and grains to vary flavor and texture profiles, and this book explains in detail how to prepare them. As an aside I also invested in an Instant Pot that also makes preparing rice and grains fool-proof and make meals much easier to prepare when possible. I particularly like the Test Kitchen Tips and Notes as well as Why This Recipe Works throughout the book as well as suggested substitutions if I don't like a particular ingredient or one isn't available. Some spices such as cumin and turmeric are now kept as staples as I'm learning I can adjust the amount to get a hint of taste without spiciness, I don't do a lot of grocery shopping because I tire easily but many spices, seasonings. cooking tools, etc. can be found on desertcart, nuts.com. and spices web sites. It's so much easier than going from store to store shopping for things. There are also beautiful color pictures of finished dishes as well as those showing preparation tips. I also like that recipes in the index are color-coded to indicate those that are fast (less than 45 minutes from start to finish) and vegetarian. I'm retired but because I tire easily I've discovered I can do much of the prep work earlier in the day then make the meal when it's time for dinner. I have no interest in some of the meals but with over 500 recipes there are also many that I've tried and are delicious and many others I've flagged to try. So much more than a cookbook - a go-to guide for healthy eating

Didn't work for me
I must have missed the description of the countries this book focuses on. I'm not a fan of the flavors for most of the recipes it contains. That said, a solid 5 stars for the format and quality of the book. This should be the poster child for the correct way to publish a cookbook! Lots of educational information concerning unusual ingredients and suggestions for commonly available substitutes. Each recipe has detailed instructions and a full color picture. The recipes are grouped according to type which is helpful. There were a lot of dip and salad combination suggestions that would be helpful to a novice cook. Gluten free users should note that there are at least 70 pages of this book that will be a challenge for you. Multiple ways to cook barley and other grains is not helpful in the US due to agricultural practices. As noted, the book is 5 star quality but I took off a star because the listing description did not give enough information to correctly judge the contents,

Staple cookbook! Great for beginners and seasoned cooks alike!
This is one of the best cookbooks I have purchased in a long time! I am a newbie to the Mediterranean diet, but super interested in a low-glycemic, anti-inflammatory and high veggie, herb and spice lifestyle. Iโm fairly picky and have a good mix of need for quick and easy meals as well as a rewarding and fun longer meal. This book has both. I will highlight that it also has it organized in sections where you can find an ingredient like chickpeas, and then it gives you 5 or so recipes using that ingredient as the base. So if you are someone who is like โI want to learn how to cook with chickpeas moreโ then this gives you a good couple of options to get those in your diet and Iโm sure you will find at least one go-to favorite from those few choices. It is well organized, informational, beautiful, and super handy! Great wedding gift, staple cookbook for any household.

6 MONTHS AND I LOST 35 lbs!!!
I donโt normally write reviews (Iโm a harsh critic), but Iโve recommended this book to so many people now, I thought I should. I lost 35 lbs. by cooking recipes from this book 3-5 times a week on average. No, I donโt exercise; I just eliminated all processed foods from my diet and replaced them with recipes from this book. I also enjoy a glass of wine (or two!) with my meal most evenings. Iโm not sure how many different recipes Iโve made from the book, but itโs definitely more than 50โpossibly 100. They are all DELICIOUS! There is not a single recipe in this book I would not serve to guests. In fact, Iโm a bit embarrassed when I serve these recipes to guests and they tell me what a talented cook I am. I blush and point to the book and say โhonestly, I can read and follow directions.โ Itโs really that simple! The recipes are very easy to follow and even a complete novice like me can turn out wonderful food if you follow the directions carefully. The recipes all call for readily available ingredients that you can find in any grocery store. There are a handful of ingredients Iโve never used or even heard of, but you can find them and I tell people to not be intimidated by them. If I can do it, anyone can. There are a great number of vegetarian recipes in here, which my wifeโs family (Hindu strict vegetarians) LOVE. My wife even complains when we go out to fancy Italian restaurants now, โthis isnโt as good as what you make!โ I wasnโt much of a vegetable guy before I started this journey, now I literally crave vegetablesโit makes my mouth water just thinking about it! If youโre going to diet, you have to like the food to stick to itโyou really canโt do better than this. My one complaint (and itโs extremely minor) is the author(s) write in the beginning that they did not include any recipes featuring things like salmon because itโs not indigenous to the Mediterranean. Really? Because neither are tomatoes (!!!), potatoes, halibut, etc. There are plenty of AMAZING seafood recipes, however. Simply put, I would have continued cooking out of this book even if I hadnโt lost the weightโturns out thatโs just a side benefit! P.S. You may want to start a small herb garden, as I recently have. Almost all the recipes call for fresh herbs (parsley, thyme, basil, oregano, etc.). While fresh herbs are relatively inexpensive, I find the quantities generally include more than I need and go bad before I can use the whole bunch. I donโt recommend trying to substitute dry herbs (unless specifically noted)โthey just donโt compare. EDIT: Itโs been a year now and Iโve stuck to my diet and maintained my weight (Iโm right on my ideal BMI). I saw some reviews that said the nutrition info is somewhat cumbersome to find. Honestly, I never even looked at that section! I just made the recipes that appealed to me and the pounds came off. I also saw some people say they thought some ingredients were hard to find; that has not been my experience. I shop at wegmans, which granted, does carry a lot of gourmet food items. But the ones that are more unique (pomegranate molasses, Dukkah, preserved lemons, etc.) the book provides recipes on making themโhowever, I didnโt make any of those as you can also find them right here on Amazon.

There is a lot of good information about Mediterranean cooking
There is a lot of good information about Mediterranean cooking, and many many recipes (that are now family favorites). However, I find a fair number of those recipes to be hugely time-consuming and entirely impractical for weeknight cooking, unless it's a day when I don't have anything else going on. My husband prepared a meal for us one evening that included three recipes from the book. He was in the kitchen for about four hours preparing and cooking dinner. It's a good cookbook, but if you're looking for manageable weeknight recipes and cook alone (no help in the kitchen) or work for a living, you may want to consider a different book...although I'm not sure what book that would be. It's also possible that kitchen wiz types will do great with this book. I'm no slouch (neither is my husband) in the kitchen, but four hours is a bit much...but it sure was yummy. :)

Instant favorite!
I have a few wonderful Mediterranean cookbooks, and it's my go to region for culinary experiments. As much as I love those books, I really wish I had saved my money and purchased this one first. The sheer mass of information in this book is astonishing. With recipes from all over the region, including North Africa, Greece, Spain and Italy, you will never get bored with it. The book is divided up into the usual sections like soups, poultry, salads, etc. but with some additions like rice and grains, breads, flatbreads, pizzas, etc. The table of contents in each section lists special indicators (little colored squares) after dishes which are either fast (45 minutes or less) or vegetarian. Within each section, the recipes are varied. Each recipe starts with an explanation of why the dish is made the way it is, such as why the potatoes are boiled instead of microwaved, why this dish is blended by hand instead of a food processor, etc. This will save you tons of time when you are thinking of taking a shortcut and find that it doesn't turn out right. Then the recipe shows photos of steps that might be unfamiliar. And then there are little "notes" inserted every few pages which go into a specific ingredient, what to look for, how it's used...things like sardines, pancetta, bay leaves...or else methods, like how to properly wash and dry a salad, or how to salt-soak beans. Many of the recipes also list further variations, such as pan roasted cauliflower...which then shows how to add capers and pine nuts, or spices and pistachios. My only minor complaint is that the nutritional info for each recipe is listed...but it's all listed in an index in the back of the book rather than with each recipe. But don't let that stop you...the fact that it's there at all is one up on most other cook books!

AFK Know What They're Doing!
Wanting to eat healthier, I checked ATK books and bought this and the Salads one too. For this book, there are so many beautiful recipes that I will make and eat. I tried the baked rice dish last night and it was delicious. I have a lot of ATK books and they never disappoint. There are a lot of nice clean recipes that I have bookmarked already. For those who love pictures in their cookbooks, this has a lot. There are humus variations as well as beans, fish, veg and so much more.

Eggplant Mutilation
Lost two stars directly for Ratatouille recipe: "Remove pot from oven and using a potato masher or heavy wooden spoon smash and stir eggplant mixture until broken down to a sauce like consistency.โ Eggplant is a delicate and wonderful vegetable and this recipe wants you to mash it like potatoes. Apparently the US based team doesn't understand the finesse in European cooking.
