I specifically needed white weatherstrip, but the 3/8 wide version I received is gray. Is there some version of this product that is actually white?

No unfortunately the product just looks white because of he White Backing Paper :( all versions are black/dark gray. Hope this helps

What color is the foam?

Reckon I'd call it "off white". It did not stick to the painted inside wall though so it was no good for sealing that opening. Good Luck, Doyle

can you still open the window when the weather is mild, or are these for windows you don't care to open?

This does not seal the window, it seals any gap.

How spongy is this- like if the size of foam is a little bigger than the cracks, will it compress to fit?

Pretty spongy. It will easily compress to half its height, and spring back when the pressure is removed.
