How tall does it sit above the stem? From stem to top of mounting?

It is about 0.75 inch (19 mm). The attached video of the bike phone mount is for your reference.

I have a giant mtb. The stem is more oval than circular. Will this clamp work?

The bike phone holder is compatible with all round handlebar and stem diameter of 22-35mm . It doesn't work with oval stem.

What cases does this work with. Seems like every case out there is Rubber or Silicone?

It works with smooth flat hard phone cases, such as plastic and metal cases.

What's the difference between gen 1 and gen 2 other than price?

The bike phone holder Gen 2 compares with Gen 1: ❶ Bike phone mount Gen 2 intergrated a alloy core, it is more stable and durable. ❷ Gen 2 increased to 4 alloy buckles, it can hold the phone more firmly and stably.
