I believe per 2oz serving it has 520g of sodium as far as I can tell. Had to go back to original website and repost a pic of it to a WordSheet and 'Zoom' into it several times. And even then it wasn't the easiest to read. But 520g per 2oz serving is what I'm reading.

How long does this last before it expires?

When mine came in, it had many months before the exp date would happen. I just can't recall specifics but was happy with the freshness and how long I had or was able to keep it in the fridge before I had to worry about its exp date. I loved the sausage. Great taste. Great heat.

The summer sausage as a whole has not been tested, however it does use Our Carolina Reapers that produce peppers with average heat levels of 1,569,300 Scoville Heat Units (SHU's), but individual peppers have been known to reach up to 2,000,000-2,200,000 SHUs
