How loud is the motor when it is running?

Incredibly loud. I was shocked at how load this is. I'm definitely returning it because I live in an apartment and I'm certain my neighbors heard it. I should have recorded a video so you can hear but holy cow it gave me the worst anxiety. To address one of the other answers about it not being louder than a blender. They are entirely incorrect. I have a ninja blender and this is FOR SURE incredibly louder than that. I honestly cannot recommend this product to anyone because of how loud it is.

If you have to refreeze your already made ice cream, does it retain the same texture or does it freeze solid like ice?

It CAN freeze harder than what the initial processing produced and if it does you are supposed to use the original setting again(ice cream, sorbet, etc). The re-spin setting is to be used only after initial processing and BEFORE re-freezing. If you have to re-spin every time you use the machine you may want to consider bumping the temperature of your freezer up a few degrees because it is probably freezing colder than the range that Ninja suggests.

Can you use non dairy like almond milk?

Yes. There are dairy free recipes in the booklet that comes in the box.

Can I make pineapple sorbet ?

I put canned pineapples in, and got pineapple sorbet. It’s even better if you throw in some coconut milk. Then you get a piña colada survey. It was really quite good.
