will this protect my cat if she jumps up on my flat-top (ceramic?) burners which stay hot a long while?

I use round cake cooling racks to cover the burner so my cat doesn't jump on them https://www.amazon.com/s/ref=nb_sb_noss_2?url=search-alias%3Daps&field-keywords=round+cake+cooling+rack&rh=i%3Aaps%2Ck%3Around+cake+cooling+rack

Can you leave these on the burners when using another burner so grease will not splatter on yhr unused ones?

yes, as long as you don't turn on the wrong burner. Also, if the burner that is for the oven heat release is covered while oven is on it will burn underneath side
