The dimensions seem somewhat small. Are these good for adults?

Having used these myself, I can assure you that they are designed for the adult hand, comfortable and effective. A child/teenager could probably use it also but with some difficulty I'm sure. The tension might be too much for a youths grip.

Does this build wrist muscle? My wrist is thin like a twig

I don't know if the tension strength is enough for your personal needs but the more you use them the more improvement you should see. Hand grips will strengthen your entire arm. Hand, wrist, and forearm muscles will feel the difference.
