Would this work on a 56" window?

It would not work with the sealing panel provide because it only extends to 50”. You could do what I did and get a piece of plexiglass or other material the size you want and seal that piece in place.

Is this unit self evaporating?

To be honest with you I can’t answer that question with accuracy or knowledge of the AC unit. I tried Pro breeze for a week. But if it helps your decision about the product, I returned it. Didn’t function very well, bottom line is it didn’t cool hardly at all. I’ve since purchased a black and decker AC unit.. works amazingly.

Many of the windows in my home do not open. Would a small dog door work?

Yes, a dog door would work, but remember the exhaust hose is six inches in diameter, and if you wanted to go in and out through the door you would be taking the hose in and out all the time. I do own this portable air conditioner

Had this unit 3 weeks, worked great but just stopped cooling. Runs full time in a 100 square foot room maybe 6' of vent. What else do I check ?
