Is this more al dente or is it pretty soft?

Straight from the packaging, this product is al dente, but the longer you rinse or heat, the softer it gets. While it is pretty taste neutral, there is a bit of the taste of the hearts of palm. If you're a fan of al dente and aren't turned off by the natural taste of the vegetable, give it a quick rinse, and have your chosen sauce already warm; then just a quick turn in the sauce over medium heat and you'll preserve that texture. If you don't mind softer textured pasta, heat a little longer and slower. I really like this product & hope you have good luck with it, too.

are the pouches shipped in an acid water like the cans --or are they drained noodles?

They are shipped liked the cans, in an acid water to keep the product fresh and safe to consume.

Since i dobt see it mentioned, i assume this product is not organic, correct?
