What is the taste of this?

Lighter soy sauce with a subtle floral taste. I brush it on raw fish preparations. It's a solid finishing soy, and good price for quality.

Are you still using the plastic cap that so many reviews say was chipped or moldy?

Soy sauce by definition is fermented Soybeans. So it will not ever go bad. I do not refrigerate any of my Soy sauce or Fish sauce. The high concentration of salt and process of fermention introduces good microbes to break the product down which makes it free of any bad bacteria and mold. What you see on the cap is most likedly dried up soy sauce film that builds up over time.

Is it normal for things to be floating in a bottle of sakuro shoyu?

Yes, it is a cherry blossom that is floating around in the bottom of the bottle. Sakura means "cherry blossom" in Japanese.
