It depends on the density of the fruit or veg you're trying to dry. I would suggest you run it for about 2 to 3 hours and test it. Once it gets to the stage you like, write a note in your little manual somewhere so you know how long to run it the next time for that item.

Where can I purchase 4 more fruit leather trays?

Not sure about where to get them but in the past I learned that you can do fruit leather easily if you have a gas stove. Its warm enough in there to dry it out overnight. Or if you have a sunny enclosed back porch you can put your trays out there in the morning & they should be done by dinner.
