I know it says not for use to snuff fire, but what is the downside if I use it to keep a dying fire from spitting embers? Discoloration? Warping?

Solo Stove Lid is designed to be used when the fire in your fire pit is out and your embers are cool. Just place Lid on your fire pit to keep out any possible rain or dust until your next fire.

Lid was also designed to turn your fire pit into a hard tabletop to place your drinks, food, or even your cards on before it’s time to get a roaring fire going.

We do not suggest placing your Lid over a hot fire pit as this can potentially force a large flame downward through the intake holes causing a ground fire or damage to the surface underneath.

can I leave my pit outside with the lid as a table in southen california?

Mine is outside all yeari in the northeast with no problem. Lid makes a nice little table and is heavy enough to stay put in windy weather.
