An excellent and reliable yeast
What's not to like about the performance of this yeast? Compared to those of years ago, this one is an absolute dream. It's quick to start (no faffing around with a started mixture, just pitch it in and away it goes), froths a little to start with but that normally goes away. It doesn't produce any off tastes that I've noticed but you do sometimes have to add some additional yeast nutrient, from halfway through the fermentation, when the yeast (in some cases) uses up all that's available. It ferments out very fast, is alcohol tolerant at normal wine concentrations - so no 'stuck' fermentations - and stops equally suddenly. The fermentation can produce some heat, and at normal room temperatures there's no need to keep the fermentation warm. When finished it settles quickly and stays firmly on the bottom of the container but in my experience it will allow you a few weeks to syphon your wine off without risk of the yeast causing any off tastes during that time. All-in-all an excellent yeast and an incredible improvement of the ones I used to use, when first starting off with this all in the early 1980s.

Clean brew!
I think it was good value for money and it was a high quality yeast. Absolutely no issues making elderflower champagne and it fermented well with the most perfect fizz. Iโm yet to taste my work as Iโm still in the โclearingโ phase but if I remember I will come back and update ๐คฃ however overall Iโm super impressed

Strong hardy yeast
Strong and hardy yeast. Starting gravity of 1.34 still going strong with bby step added over 5 days. Currently at 14% after 3 weeks. Would recommend ๐ฏ

My Absolute Yeast Winner
I have used this yeast for a few high alcohol homebrew projects now, and it really is an absolute workhorse. If you are looking to brew something with a higher ABV, this stuff is brilliant. It handles high sugar levels without any fuss and easily pushes up towards that 18% mark without stalling. I mostly use a single 5g sachet for standard 4.5 litre demijohns, but the packet says it can stretch up to a full 23 litre batch. One thing I really appreciate is how clean the finish is. It is a very neutral strain, so it does not leave any strange or unwanted yeast flavours behind, meaning your fruit or grape characteristics actually come through properly. It also flocculates well, settling down into a nice, tight layer at the bottom of the vessel, which makes racking off much easier and leaves you with a beautifully clear drink. The only real downside is that because it is such an aggressive fermenter, it can sometimes strip away some of the more delicate aromas if you let the temperature get too high. You definitely need to keep an eye on your room temperature and keep it in a cooler spot if you want to preserve those softer fruit scents. It is also worth keeping a few packets in the cupboard as a rescue backup, as it is famous for restarting stuck fermentations when other yeasts have given up. This is perfect for anyone making strong fruit wines, high-gravity meads, or country wines where you want a reliable, dry finish. It does exactly what it says on the packet and has not failed me yet.

Rescued my elderflower champagne when the wild yeast wouldn't start
Bought this for a batch of elderflower champagne after relying on the natural yeast from the flowers, which just sat there doing nothing for days. No bubbles, no activity, nothing. I was about to write the whole batch off. Pitched one of these EC-1118 sachets and fermentation kicked off almost immediately, within hours. It's a neutral, reliable strain that doesn't fight the delicate elderflower flavour, and the high alcohol tolerance means there's plenty of headroom if you want it. Getting two sachets in the pack is handy too, so I've got a spare ready for the next batch. If your wild ferment is being stubborn, this is exactly the reliable kickstart you need.
