If I wanted to use this for a child gate, would it be strong enough?

It depends on the age of the child. I make a lot of custom gates for both kids and dogs and this is the latch that I typically use. If the child is string enough to pull the latch they are probably able to operate any of the other latches that are available. I have installed dozens of these and so far none of my customers has expressed any issues with it to me.

WE HAVE THEM ON GATES FOR THE GRANDBABIES. WHEN THE GATE SWINGS SHUT THERE IS A MAGNET THAT MAKES IT AUTOMATICALLY LOCK. IT DOES MAKE A CLICKING NOISE WHEN IT LOCKS BUT THEY WORK GREAT.

I have a opening between the gate and post of slightly greater than 1 inch (about 1 1/8"). Will this latch work?

You may have to put a small block of wood under the two pieces to shim the two pieces to get them closer together the magnet is stong but I am not sure they will pull that far apart. The one I installed works great at 5/8 apart.

When you pull the latch does it stay open i.e. once closed we can pull and leave it unlatched?

No, it is meant to be a self closing latch. The magnet will automatically catch when in the gate is in the closed position.
