Q: How difficult is it to get the iPad in and out of this case? I have a keyboard case, but want something for when I'm not using the keyboard.

Not hard at all it pops in and out very easy but doesn’t fall out

Q: What is the interior surface? Product description states 'Microfiber, Soft and delicate" yet more than one review describes it as dippled "plastic".

The interior is a "dippled plastic" (very fine dippling). Feels almost like rubberized material. Soft, scratch-free. Mine is black exterior with beige interior. Definitely not "micro-fiber."
