Can you smoke a full brisket with water pan? Or is it too small? Im thinking to use it on my apartment's balcony

Yes, you can smoke full briskets; with water pan if the pan is not too large. Would be perfect for a patio. That's where ours is. one thing, though. It needs to be covered when it rains as it is not water proof. Leaks around the lid. Love it though. This is our third one in about 40 years.

What is the height from table top to grilling surface? I'm trying to determine how high a table I need.

Approx. 11-12 inches. We have ours on a tall 38 inch work table

I want to use wood not charcoal. I plan on cooking with the lid up while using a wok. This will be a hot fire. Will the construction take the heat?

I believe you will be just fine with using wood. Just move the pan closer to the wok. I have had mine maxed out as far as heat does and it did just fine.
