These are some very sharp knives and make quick work of de-boning and trimming a brisket, pork butt, or other meat. The slice knife gives a smooth, clean cut yielding a nicely portioned piece of brisket. Be warned, though, these are extremely sharp as I cut my finger while de-boning and didn't notice for several seconds.

Very nice set for occasional use for the weekend BBQ person. Fast delivery, well packaged and as described. Two items were not really overly sharp and disappeared that there was not a real cover for the blades but a light cardboard coves.

I can say without hesitation that the knives I purchased are the sharpest knives in my drawer. :) They cut through like cutting through butter.

The shorter knife i used for trimming the fat cap. It's sharp and worked wonderfully. Once it was done, I used the large knife for slicing. Really performs well!!

Really easy to use, good grip and sharp upon arrival. I trimmed up 6 briskets and about twenty pounds of sausage links at our church's weekend retreat. Was very thankful I had these to make the work easy!

I was hoping for both to come a bit sharper out of the box. I guess you get what you pay for. The trimming knife did a good job, but the slicer required a lot of sharpening to cut smoothly.

This knife set is perfect for the smoker in your life!!! Got It for my husband this Christmas and It cut the fat off our ribs and brisket like It was going through butter. Totally Worth the money!!!
