how do I know if a particular nose clip will fit

You don't always know, it's a hit or miss situation. I like to buy ones with a metal body that's covered in rubber. They're pliable and you can bend them to fit.

Does it float when it falls off?

I don't know because it has never fallen off. I used it everytime I swim. I do wipe my nose to remove the sunsreen before I go into the water.
