I own a lot of knives, even an $800 full custom boning knife hand made by Chelsea Miller that my brother gave me years ago. I also like well made, cheaper cutlery for everyday use. I own two Dalstrong knives - the 3.5" Shogun paring knife and the 6" Shogun Series X hammered chef's knife and I've never used better everyday knives. Both knives are Damascus. I prefer shorter chef's knives like the 6" over most 8" knives because they are easier to handle. Below are my pro/con for the 6" hammered chef's knife. I reviewed the paring knife separately. Pro: -Very sharp -Impeccable fit and finish -Heavy, solid handle. Some folks might have issues with the handle weight and the balance. It's not an issue for me -Hammered effect looks amazing -Sharpen easily. I use a DMT two sided diamond stone and an 8000 grit Japanese water stone with a ceramic rod and steel -Handle well - good grip. Some folks whined about the embossing on the blade making the blade hard to clean. I call BS on that take - hand wash with a Dawn dish soap and a sea sponge and it's not an issue. Con: -This might sound stupid, but the box is a complete waste of resources. I attached a photo of the packaging from the paring knife but it's identical to the chef's knife packaging, just smaller. It's a waste of landfill space. Put this cutlery in a simpler, more environmentally friendly package and lower the price 10%. Otherwise, these knives are excellent, look great are sharp as hell, cut well and sharpen easily. Your experience may vary.

This knife is perfect! - Really sharp and easily cuts everything, from vegetables to meats - The size is great since it is easier to handle than a bigger knife, especially for those that are not experts with knives - Nice design. The blade is carved and different from the usual knife, which is an additional feature. - The attention to detail in the packaging provided a great experience. When I first opened it I knew that I had bought a quality knife. The only downside I could find, and it's only a small thing, it's the storing case. Unlike other knives I have previously bought, the case does not hold in place automatically. There is a string with a plastic end that you need to wrap around to secure the knife in the case. However, it does not hold in place easily so the knife can come out of the case. An upgrade in design for that feature would make this knife even more perfect.

Hi, I'm reviewing all of my Dalstrong knives. NOTE: I was a professional (Meat Cutter/Butcher) for over 13 years and a in-home chef (yes I am a woman..LOL). I have been looking for another set of knives for a long time. The proper weight, balance (blade to handle ratio), quality of the steel, edging of the blade (angle of the edge), grip of the handle and the flexibility or stiffness of the blade, depending on the task you are doing. My boning knife (Dalstrong Gladiator Series) is the most important (I do not let anyone else use), and keep in its case. (It's in the picture for viewing purposes, 3rd from the left). The boning knife does its job! It has the proper feel and grip. It has a proper lip at the bottom of the blade to protect your hand from slipping onto the blade. It has just enough flex on the tip to maneuver in and around bones and joints, and just the right amount of stiffness to cut through joints and membranes. The quality and sharpness of the blade is amazing and the construction of the handle is absolute quality workmanship. I highly recommend this knife. As a note, I wish they had a 5 inch boning knife, but they do not.. The rest of my Dalstrong set includes a, 10" and 6", Chefs(Shogun Series). First two on the left in the picture. Warning : they are sharp, sharp, sharp! The quality and sharpness of the blade is amazing and the construction of the handle is absolute quality workmanship. (The only one I do not have is the filleting knife, for fish) These knives are NOT meant for the dishwasher or children. The blades are very sharp! (I just glazed the edge with my finger and cut the crap out of myself !!). They're a professional set . These should be hand washed. If you want knives that you put in the dishwasher buy something else!! These are a professional set and should be treated as such!!
