Packaging was impressive and each component of the set had satisfying weight. The steel is a little short but that is ok. The knife performs well and looks great. However what would have been an excellent and ergonomic handle is ruined by the tang being proud uniformly along the handle and is rather sharp where it is. This is true of the steel and fork as well. Since I don't use a slicer in my home very often and when I do it is a short affair this is not a very big deal. However if this had been a chef's knife or santoku I would be working with for a while I would be very unhappy. I have purchased knives for half the price that have better assembly than this. I was considering Some Dalstrong Shogun knives to replace some of the cheaper Japanese knives in my block but was skeptical with them being such a new comer with distribution limited to Amazon. As a result I did not give their positive reviews too much credit assuming most of the purchases were by people who have never used a good knife before. Long story short, if this is what I can expect from the shogun line saving $30 on nakiri over a $139 Shun Nakiri just does not make sense to me. *****UPDATE***** In less than a day after my review Dalstrong has contacted me regarding the condition of the knife I had received and has made promises to resolve the issue at no expense to me. They however were out of this knife at the time of contact and I will have to wait for it to become available. Given the level of customer support they have displayed up to this point I have no reason to believe they will not make good on this promise. I will be upgrading my review from 3 to 4 stars until such time as I receive the knife they want me to have. In truth I have been so impressed with their efforts I would like to give them the full five stars but this is a review of a knife and not just customer service. I look forward to being able to update this review very soon. ****UPDATE 2**** Problem has been addressed with a replacement from Dalstrong, Great knife and stellar customer support.

I bought this to use for larger dinners. Our first thanksgiving I broke this bad boy out from its box and got to work carving up the turkey. All went perfectly and at the end of the night I grabbed the carving knife once more to finish off the rest of the turkey. Then it happened; one second im finishing cubing up some meat for future soups, and the next second im holding my finger to stop all of the blood from getting everywhere as we head to the emergency room. This was of course user error and in no way Dalstrongs fault. I had some grease on my hand and I simply had a mishap. With that said, the knife was sharp enough to cut to the bone with only the weight of the knife while it was slicing my digit wide open. The cut was also clean enough to make the tendon re-attachments quick and easy. I have a small collection of other Dalstong knives and knew they were sharp, but this thing really solidified my trust in the knife brand and their commitment to quality. As long as they keep making knives this good, I will forever be a loyal customer.

Owning a high quality carving set its vital for smooth carving. This Dalstrong set is profoundly ideal. The quality of this set is amazing. I am beyond happy with my purchase and I will undoubtedly buy this brand again and again. It is sharpened to a razor thin edge which lets me carve ultra thin slices. The balance is superb and the look is professional and top shelf quality. I'm a sous chef at a local country club. I've always had one special chef knife and used whatever other knives the facility had. For Father's Day this year, my oldest son got me a great knife roll-bag and said I should put my knives in it; but I didn't was to put my home kitchen knives in it. Beautifully crafted and packaged. Nice thick and heavy fork. It just didn't cut like I thought it would based on reviews. I'm no chef, but I just thought it would slice brisket and prime rib a bit smoother. It was definitely smooth enough to be a valuable carving set. Guess I was just ready to be blown away, but fell short. I'd definitely buy DALSTRONG again because they're so beautifully crafted and you can tell they care about their products. I just know what to expect now.

Solidly built, very sharp. Perfect gift for my brother who has been murdering the turkey with our fathers 50 year old carving set. The knive also has the voids to reduce slices clinging to blade. His wife has jumped whole hog into cooking and smoking meats so this is perfect for turkey, brisket, chicken, and pork.

I've been holding off on purchasing a carving set for years. I couldn't justify the expense of a premium set and didn't want to compromise price for quality. I was pleasantly surprised at the quality of this set, I have paid a great deal more for my Wustof classic knives and the quality is equal. the first thing that I noticed immediately was the beautiful balance that the knife had when I picked it up. When I sliced a prime rib, it was no effort at all. Love the knife and will be ordering more in the future. I highly recommend this company.

Great set if you don't want to pay £100's. Be careful as they are very sharp so keep them well out of reach of the little ones. Nicely balanced and a good size. They also come well presented in a nice box which is where I store mine when not in use. I would also recommend not using the sharpening stick (supplied) as they are razor sharp and it would do it justice by using a whetstone.
