Will these napkins fit in a napkin holder that measures 7.75 x 7.75? I'm having trouble determining the unfolded dimensions.

These napkins won't fit. They measure 8"x8.5". If you want napkins to fit your napkin holder, you should get the Vanity Fair Everyday napkin.

Why so expensive for only 100 napkins I can't find other brand at a cheaper price?

I have no idea. They are heavier then your normal napkin. I would at least try. Might save you some money.
