Rubber gaskets are cracked. What size gasket do I order? Does it matter rubber or silicone?

It depends on the size of the jar. 100 mm for the 3 liter jar. Take off the old gasket and measure it. 100 mm - approximately 3 1/4 " (80 mm) inner diameter and 4 1/4" (107) outer diameter. For 85 mm gaskets - approximately 2 1/8 (54 mm) inner diameter and 3 5/8" (92 mm) outside diameter which fits .5, 1, 1.5 and 2 liter super jars. I've used French canning jars for 40 years and replaced the rubber gaskets last year. I own 20+ jars in various sizes, so I just purchased both size gaskets.

What are the dimensions of the various jars (not the package) - most specifically the height?

1,000ml jar is 7" tall, about 5 1/2 " wide including securing wires. In this style, all smaller sizes are the same width. 750ml jar is 6" tall. 500ml jar is about 4 1/2" tall.
