Am I able to change the channel that I connect to? Say from channel 1 to 9?

To minimize interference, use only channel 1, 6 or 11

Is this all inclusive or will I need other components to make it work?

Pretty sure you do not need permission from AT&T to set up your own router and use their gateway as essentially just a cable modem. There are plenty of forums you can find with instructions on how to do this.

Does it have a bridge mode? I dont want to replace my firewalla as a router.

Yes, it does have VLAN bridge mode settings in the Admin section.

States "comes with router" but then states "router comes separate"? Which is it?

This kit comes with one router and two satellites.
